Phoebe, a culinary instructor, gluten-free chef, author, and Hashimoto's advocate, is dedicated to finding the sweet spot where health and hedonism intersect in the kitchen and beyond. Her passion for cooking emerged early on in her life, starting a food blog in 2008 to find creativity and purpose during her first job out of college. Her experience as a gluten-free chef led her to try to heal her body with leafy greens during her mid-twenties.
In 2012, Phoebe created a virtual home for her gluten-free comfort food recipes that blend her old life of chef-y hedonism with her new consciousness about health. Her goal is to keep things approachable, accessible, and not too crunchy. She provides healthy hedonist travel guides and insights into balanced lifestyle choices beyond food, such as the benefits of kale margaritas. Phoebe's mission is to empower people who feel overwhelmed by the abundance of wellness to-dos on the internet to choose their wellness adventure and find practices that are worth their time, money, and energy.
Phoebe's journey to wellness is chronicled in her year-long Wellness Project series, which documents her roadmap for healing. Her book, The Wellness Project, puts her lessons on healing Hashimoto’s Thyroiditis into perspective. Her site's recipes were developed in a 400-square-foot studio apartment in Manhattan. Phoebe now lives in Brooklyn with her husband Charlie and a dining room table. She sends a weekly newsletter every Sunday, which includes behind-the-scenes fodder, upcoming events, and a recap of all the recipe happenings.
