Ella believed that she had good eating habits; she ate salads and drank water. However, she was unaware that she was consuming excessive amounts of wheat, processed foods, dairy, meat, and other foods that were detrimental to her health. About a decade ago, she began experiencing inexplicable symptoms, including difficulty breathing, chewing and swallowing.
Although it was challenging to give up some of her favorite foods, Ella persisted in her quest for better health, taking two steps back and one step forward at times. With time, her physical and emotional strength increased, leading to a more positive and fun-filled life. She avoids consuming refined sugars, opting instead for low-glycemic sweeteners such as coconut palm sugar, maple syrup, and honey. She also incorporates protein into her desserts, as it makes her feel fuller and happier with less food.
